Yes, they do - hence their name. Read the ingredient statements and you should find prawn listed, though some might contain fin fish.

You should not eat them if you are allergic to shellfish (which includes shrimp) or even if you are allergic to fin fish.

They can be crunchy for two reasons- if you eat them with their shells on, these are made of a hard proteinaceous substance, as are the legs and antennae of the prawn which form it's 'exoskeleton', so these will by their very nature be harder and crunchier than the soft body that lies within. Also, they can be crunchy if cooked in a crispy coating or sauce such as Chinese prawn balls (which surround them in batter) and other types of cuisine.
