The reasons he's taking so long is because, well, think about how long the other three books are: it's going to be a long book.
Here are some reasons:
a) he has to fulful all of the prophecies
b) he has to figure out Eragon's interest in Arya and vice versa
c) he has to show more about Elva
d) he has to show more about Werecats
e) " " " " " " Angela
f) he has to show the next Dragon Rider
g) he has to show why the series is called "Inheritance"
Mostly adventurous fantasy fiction.

The author, Christopher Paolini, was inspired to write the Eragon series after a dream he had about a young dragon and his rider. He began working on the story at the age of 15 and self-published the first book when he was 19.
There will be a total of four books in The Inheritance Cycle. Christopher Paolini has advised that he still intends to continue writing after this, but it will be with a different storyline and most likely some new sets of characters. He hasn't ruled out bringing some old characters back.
