The carb or carbs could use a good cleaning, maybe starving for fuel on the low side. Enough to let it idle, but no extra for take off.
This is a dirty throttle body. Very common on our trucks.

Check for a malfunctioning idle air control valve or a throttle position sensor, both are located on the throttle body.
