Your 1999 Buick century keeps overheating you bought this car from an auction They said it needed head gaskets because of the overheating So you did that Then you changed the thermostat water pump and?

If you replaced the head gaskets, thermostat, and the water pump and it is still overheating then I would ask about the fan. If it is not the fan, then I would say that you have at least one bad head, if not two. But that is just a guess. A mechanic will pressure test the system and will be able to tell you more.
