It is normal in cold weather, it's just the knock sensors. If however, it still ticks after engine is warmed up, e.g after driving for 20-25 minutes, get someone to look at it.
The normal operating temp for any Mercedes is between 80°C and 100°C (the next line after 80°) Anything over 100° and you should have it checked out. Mercedes are different, in that, the temp gauge is constantly moving because it provides true engine temp data... not just (normal) or stuck in the middle of the gauge.

It depends where you live, and the weather during all year.But, in normal conditions it can be 80 to 87 Centigrades. I¨m living in a country with short winter and long and very hot summer, so sometimes it reach up to 100 Centigrades. Be careful do not enter in the red zone, you can damage your engine.
The cooling fan is coming on cooling the engine. Very normal.
