You could be getting a little cylinder "wash down" from an injector that's sticking open. Try a little fuel injector cleaner in the next tank of fuel.

If the carburetor is cleaned on the Yamaha Bruin 350 and it will idle but stall when given gas, it could be that the float is sticking. The carburetor may also need to be adjusted by turning the adjustment screw so that it is not getting too much gas when revved.

The 350 (5.7L) Chevrolet was installed in the 1500, 2500, & 3500 Chevy trucks. The Chevrolet Silverado had the 350 that year.
It's hard to say without knowing the year/mileage of the engine, and any modifications. Using prior knowledge the redline should be between 4500 to 5500, Though I've revved a 1992 2 bolt 350 to over 6000rpm and had no trouble I wouldn't recommend it. My 1989chevy 2 bolt main I've revved to 7400 rpms before shifting wouldn't recommend anything over 6000 rpms though the engine didn't last to long.
First, check the EGR valve for leaks and/or proper installation. If that's not it, check for vacuum leaks.
