This person is obviously still in love with his ex. Usually in books, when a persons mouth goes dry they usually Ike the person that makes it happen. This person is avoiding his ex - girlfriend because he doesnt want to admit that he still likes her, or he doesnt know and he`s scared. Whatever happened between the two, it was either pretty bad or pretty rough, but he hasn't had the chance to heal.
