It is important for the proteins and compounds within an organism to have a very narrow range pH. Any deviation will compromise their function. Since our diet can change the internal levels of acid and base there is a buffering system within the plasma and adaptations of both the pulmonary, renal system and digestive system to excrete excess base or acid to keep internal pH as close to 7.4 as possible.

The ideal pH range varies with the part of the body. For example, healthy blood has a slightly alkaline pH of around 7.35 (7.0 is neutral, the pH of pure water). The small intestine, however, prefers to operate within a slightly acidic range of about 5.8 to 6.6. The juices produced by the human stomach have a range of 1.0 to 3.0: very strongly acidic. To inhibit the growth of nasties, healthy human skin is moderately acidic, with a pH from 4.5 to 6.0. Overall, the pH of the human body ranges from about 6.0 to no more than 7.5, often on a daily cycle.
