There is one 'Unown' for every letter of the alphabet, so that means 26, but, once you have caught all of them you must talk to the Ruin Maniac and he will set you challenges, so do them and eventually he will dig so deep into the cave that he will pop out on the other end of the Solaceon Ruins and you can catch the unowns ? and !.
