Because we both have different styles of policing. The American police uniform is designed to be able to carry a sidearm on their utility belt whereas the British police aren't. It also goes back years ago to what the first police uniforms where like for British or American officers. Britain had a tunic and the signature high helmet with metal logo on it and we still have that today here, whereas police in the US usually wear a "garrison" hat or, in some cases, a 10-gallon hat.
Actually, not all students in Britain wear uniforms. It's just like here in the USA, some schools have uniforms, but most don't. You would think British schoolchildren wear uniforms because of what you see in movies or tv shows. But really, British schools have about the same unifrom ratio as to American schools. Actually this is not true, speaking as a 17 year old English school-girl, I can assure you that it is not the same as American schools. In the United Kingdom 92% of state and private/boarding schools have strict uniform policy wheras 18% of US schools do. Usually the ones in the UK that don't are special-needs schools.

In war, enemy soldiers are given nicknames. Graybacks was the Union nickname for Confederate soldiers because of their gray uniforms, just as British soldiers were called redcoats because of their red uniforms.
