I work at a place that serves soft serve ice cream, we are located outdoors, our biggest problem is that the machines we use are not made for the outdoors. We are open in the summer so it takes longer for the mix to freeze. The machines we use are at a Baseball stadium, and we get extremely busy during the middle innings, during this time it is common that the machines cannot keep the mix frozen during this time, and we have to turn away customers. The main problem we have found is with the freezing of the mix.
