Cucumbers are annual, as they have to be planted every year. A perennial plant is one that does not die completely after the growing season, and will regrow from the same root system. A cucumber plant will die completely after the season and will not regrow. You will have to plant new seeds to grow new cucumber plants.

Depends on the variety. Bush beans are almost always annuals whereas many variety of pole beans have a starchy root and are actually frost tender perennials. Outside of the tropics they tend to also be treated as annuals along with non-root forming pole beans as they die back in the winter all the same, though if the ground doesn't freeze too hard they shoot back up in the spring.

Aubergines, or eggplants, are botanically perennials. In the garden, though, they are grown as annuals.
