Copper pots and pans will retain heat for a longer time whereas aluminum pans will heat up quickly but they will not retain that heat for very long. Copper is usually much heavier than aluminum also so this is another factor you need to consider. They both are good for cooking, and yet safety wise they both can seep into your food unless they have some protective coating on them. The other big difference from the two is that copper is the most expensive out on the market whereas aluminum is one of the cheapest and is readily available at any store.
