Another list of chemicals would be food processing aids and preservatives, which are neutral in small amounts. Included on this list would be calcium proprionate, lime, sodium phosphate, baking soda, etc.
Still another list would include food colors, flavors, and fragrances, which again are mostly neutral in small amounts: tartrazine, ethyl butyrate, vanillin, capsaicin, etc.
Then there are chemicals that get in to food as contaminants. These are generally bad, sometimes even in small amounts: Mercury (seafood contaminant), arsenic (natural mineral in some bottled waters), radon (natural contaminant in well water), nitrates (from fertilizer pollution), lindane (insecticide), perchlorate (mostly in California, from rocket fuel industry and space vehicle testing), trichloroethylene (dry cleaning fluid), etc.
