Are goat balls a pizza topping?

Only if you've a goat, and have the balls. But, no, not commercially, at least.

Perhaps you mean balls of goat's cheese? As with the traditional Pizza cheese, mozzarella, usually made from buffalo's or cow's milk, there are varieties of cheese made with goat's milk and formed into balls, as is mozarella.

Balls of mozzarella, and sometimes bocconcini (another cheese made originally from buffalo milk, now produced commercially using a combination of cow's and buffalo's milk), are sliced or torn* and placed on top of pizza. Balls of goat's cheese can be used in the same way.

Unless you are particularly wanting to make a traditional type of pizza, you can use any cheese you prefer, or whatever cheese you have available, though if you only have processed cheese you might like to reconsider pizza and make a sandwich instead.

*Some recipes suggest these soft cheeses be torn rather than sliced. Once baked, the cheese will melt and few will be able to tell by its appearance whether you tore up the cheese or used a knife on it. I am able to assure anyone wishing to cook with these types of cheese that it will taste exactly the same whether you cut it or tear it.

Similarly, there are recipes which insist fresh basilshould be torn rather than cut. It is feared that using a knife or, more convenient for fresh leafy herbs, scissors, will cause the herb to lose flavour.

I have never met anyone who can tell whether basil has been torn or cut, except by looking at it, in the same way I've never known anyone who can tell whether the salt used in cooking is own-brand supermarket or sparkling crystals plucked from Mediterranean rocks by Greek virgins, unless they happen to see the package you've used.
