Cells present in the human body are eukaryotic. Red blood cells have no nucleus but they are eukaryotic. They contain a nucleus during development but eject it to make room for more hemoglobin. So since they really do "have" a nucleus red blood cells are eukaryotic. Also when trying to distinguish if something is a prokaryote or a eukaryote try to look at other things not just the nucleus for example if the cell has organelles it is a eukaryote.

A eukaryote is a cell that contains a nucleus. A prokaryote literally means "pro" - before and "karyote" - nucleus, and they do not contain a nucleus. most bacteria are prokaryotes.

Seeing as how every human I have met has been multi-cellular containing complex processes I would say that humans are eukaryotes, or at least made up of them.
