potatoes are not purple
potatoes are from Peru. The purple potato is simply a result of breeding and genetics.
Eggplant has a purple skin. There are also varieties of corn, potatoes, and onions that are purple.

Anthocyanin is the pigment that give blue and red potatoes their color. The pigment ranges in color from red to purple to blue.
In rare cases, possibly because the food system so so vast it is difficult to manage entirely. However, GM russets are typically not sold on supermarket shelves, like all other GM foods, they are used mainly for processed food items like instant potatoes, bag soups, or frozen dishes. At one point after McDonalds rejected the GM russet for their fries, I though funding for that project failed. Hopefully they didn't restart it but my brain says otherwise, I am sure they have been making GM russets for some time even after the McDonalds scandal.

I have no clue what you mean by this. If you mean official food groups, then there are only 6 (carbohydrates, fruits, vegetables, proteins, dairy, junk). If you mean every edible food that exists that is eaten or has been eaten, then there would be an infinite number of foods. I mean, there are even different species of the same type (purple potatoes and waxy red potatoes and Yukon gold potatoes, etc.).
