What stamps a particular collector is looking for depends on the interests of the collector. Some collect a specific time era from a certain country. Others collect anything they can get their hands on. Still others use stamps, cancellations, covers and sheets to tell stories about a topic.
There are basically three markets for stamp collections. You can sell them privately to a collector that is interested. You can sell them through auction, either an auction house or yourself through eBay, which is more and more common, but does require quite a bit of work on your part. Or you can sell them to a stamp dealer.
If you walk into a dealer or auction with a book of stamps, they will take a quick look, see if there are any high value items in there, and make an offer. It is the least lucrative way to sell them.
Individually sorted and cataloged items in sets or individually are more likely to get you the best money. But that requires you to identify all of them and provide catalog prices.
There is a company in South Leicestershire called The Ten O'Clock Show Ltd. They offer a free valuation service and will pay for a courier to collect and return heavy collections. Obviously, they are looking to buy these collections, hence they pay for transit. There is a link at the bottom of this page, or just type 'stamps' into Google and they come up on the first page. Sadly, there are fewer dealers around anymore. Many have died and young people are not taking up the hobby anymore.
There are quite a few on-line stamp dealers around, but you need to be careful who you choose to sell to.

Stamps are listed in catalogues with two values, a value for a mint (not used) stamp and a value for a used stamp. In most cases the mint stamps will be worth more than the used stamp but it depends on the rarity. Sometimes a used stamp can be worth a lot more than a mint stamp if it is rare in a used condition. The actual postmark can also makes a difference in price.
It depends on how you define 'worth.' If you mean to make money, probably not, most collectors don't recoup the value that they put into the collection, at least in terms of money. The value in terms of learning, relaxation and new friends, it is certainly worth it!

Although there are rare stamps, in general WWII food ration stamps in a book of stamps (with some missing) are worth $2 to $5. An absolutely new book of stamps (unsigned) might be worth $10 or more. A book of stamps signed by someone famous would, of course, be worth even more. Loose stamps (not in a book) are generally worthless - a few pennies, if that.
