Yes, if you have an Alto C 12 hole Ocarina you can make a dove call, and an owl call. To make an owl call you just cover all of the holes on your Ocarina and mimic an owl's call. To make a dove sound you cover all the holes except the tiny hole on the right side (Sorry I don't know what it's called right now) and then right after you blow unplug the bottom left thumb hole. You cover the holes and blow on it. There are many free ocarina song websites on the internet. There's usually this one hole that you can't cover or it won't blow.
If you are talking about LoZ:Oot, then to open it, there are two ways: 1. On the 3DS version, you press the ocarina at the bottom left corner of your screen. 2. On the N64 version, you equip it and press the c-pad button its alligned to To PLAY the ocarina, you just follow the buttons on the screen (you can play any note, but the can only play songs you have unlocked)

12 hole ocarina music is just the same as any other music. You read the dots, and play the notes. Of course you will need to know the proper finger positions for each note, and know the name of each note. First things first, to hold your ocarina, have your left palm facing you, your four fingers on the holes on the top, and your left thumb over the hole on the left side on the bottom of the ocarina. Then, place your right hand over the other side, covering the top holes with your fingers, and your thumb covering the other bottom hole.
