Orange Glazed Carrots
1 pound baby carrots or large carrots cut into 1" slices
1/4 cup Orange Juice
3 tablespoons brown sugar
2 tablespoons butter
Dash of salt
- Boil carrots until tender. Drain.
- Pour orange juice over drained carrots and stir to mix well.
- Simmer over medium heat for approximately 5 minutes.
- Stir in the brown sugar, butter and salt.
- Stir and heat until butter and sugar melt and are mixed well.
Roasted Carrots
12 carrots, sliced diagonally into 1 1/2" pieces
3 tablespoons olive oil
1 1/4 teaspoons kosher salt
1/2 teaspoons ground black pepper
2 tablespoons minced fresh dill or parsley
- Preheat the oven to 400 degrees F.
- Toss carrots in a bowl with the olive oil, salt, and pepper.
- Pour in a shallow baking dish or pan to make a 1" layer.
- Bake for 20 minutes or until brown and tender.
- Sprinkle with minced dill weed or parsley.
- Serve.
