I have read about data centers using water-cooled systems, but they are expensive, prone to leakage and likely based on older, less-efficient technologies. Data centers which cool the air around the hardware allow you to use more standardized hardware and eliminate the concerns with coolant leakage and maintenance of that system. In the end, I would suggest that you look at the design with a more traditional approach and consider a water-chilled system only if there are large limitations specific to your needs that a traditional air-cooled data center cannot address.
