As is the case in so much of life, the answer is that it depends.
Certain dates and mintmark combinations are valuable (for example, 1909 S and 1909 S VDB, 1914 D, 1922 Plain, and 1931 S are the key dates, a dozen-or-so others are known as "semi-key"), and in general coins are worth more the better condition they are in ("better condition", by the way, also means "not cleaned" - cleaning a coin is a great way to destroy value).
A 1909 S VDB in Brilliant Uncirculated condition is worth several thousand dollars. A 1957 in circulated condition is worth two or three cents - the value of the copper contained therein. As I said, it depends.
Wheat pennies from the 1940's and 50's are 5-10 cents.
Because people do collect them.
All wheat pennies, regardless of year are worth at least 3 cents if the date is readable. Some wheat pennies though, are worth quite a bit more. For instance, the 1909 S VDB penny is worth several hundred dollars even in worn condition and so is the 1914 D penny. However, a 1909 S VDB penny in pristine condition could be worth thousands of dollars. In general, the older the wheat penny the more valuable it is. For example, most wheat pennies dated in the 1940s-1950s aren't that valuable, but wheat pennies dated in the teens and twenties are worth a lot more.
Coin dealers will buy them. How much they pay depends on factors like the date and condition. Something like a 1909-S is more valuable than a 1945-D.
