Yes you can. You can leave the Catholic faith and become anything you want. There is no law that dictates to you what you believe in - at least in a democratic country. You can become Muslim, Protestant, Atheist, whatever. It solely depends upon the person.
HOWEVER, the Church will not be happy about it. You may be given a hard time, depending upon how those around you react.
Roman Catholic answer: Are you allowed? Okay, that sort of depends on what you mean. Are you allowed to reject God, and heaven and choose eternal perdition, well, yes. God allows man free choice, it is the only way that he can choose to love God. So, like the fallen angels, we always have a choice. We are supposed to use this choice to choose God. "Choose life, therefore, that you may live". Leaving the Catholic church is known as apostasy, it is a very bad choice that has eternal consequences. Before making such a step you should make an appointment with a priest to sit down and discuss this with him to find out what all the ramifications are.

If the Muslim woman is convinced in Islam and practicing her religion while the Catholic man is not practicing his religion, then why the Catholic man doesn't read in Islam religion. Consequently, if he gets convinced in at least the 5 Islam pillars, he may chose to convert to Islam. Only in this case, his marriage with the Muslim girl could be possible per Islam religion.
