If there is no one to check on the hamster, I would not extend it past 3 days. For example, if it is a weekend and you left Friday morning, make sure you are back by Sunday evening. If absolutely necessary, you COULD give your hammy at leasat 2 full food bowls and at least 16 oz. of fresh water. That could last them up to 5 days, but it is not recommended. If there is anyone who can just check in once a day to refill food bowl(s) and water bottle(s) that would be the better solution.

No way! You shouldn't touch your baby hamsters until they are 3 weeks old. If they are younger than that and you touch them, your scent will stick to their fur. After that, the mom hamster will get scared of the new scent on her baby and EAT THEM!! You don't want that, so don't touch them too early!!
