Well no pet should be left unattended for a long time, although rats are pretty independant. As long as they have a large supply of food and a large supply of water (depending how many rats you have).
I say I dont think anything bad would happen if you left them for a weekend.
But you'd really have to over stuff their cage with food, there is never too much really. But too little can be a harm.
One will survive alone, but two would be better. Just don't get opposite genders. If you'd like a happy mouse get two; they are really social creatures.

That depends, a pet rat is technically a Norway or Brown rat these animals do live in the wild and thrive there as they are very adaptable animals. However, if you own a rat and have some case where you can no longer keep it DO NOT release it into the wild, give it away to an animal shelter. A rat that has been raised in the comfort of human care will not survive for long in the wild if it does not have a large pack to live with.
