yes they can... i think in most cases it occurs from being shot during hunting seasons. My father has taken a few deer that have had gangrene from either being shot with rifles or bows and arrows.
I personally have never harvested a deer with it but just 3 days i shot what appeared to be a normal spring gobbler(wild turkey) until i began to skin him out. He had the beginning stages of gangrene starting to form on his leg from what appeared to be a puncture wound probably caused by a spur from another turkey he fought with.
I called the meat science dept. at NMSU and they informed me that meat contaminated with gangrene is in NO way safe for any consumption, not even for dogs. They recommended that we have the meat incinerated.
