A bigger front sprocket gives a higher top speed. A bigger rear sprocket gives a lower top speed. A bigger front sprocket is less torque more top speed, and a bigger rear sprocket is more torque less top speed.

Yes, there is a torque setting, but rarely does anyone torque that particular bolt. Torque it to 25 lb/ft until you can find out the correct torque setting. Call a Ford dealer or look in your owner's manual for the exact torque.
