The Buddha did not prohibit the eating of meat or fish. He prohibited his followers form killing an animal for food or from having someone else kill an animal for food for us. Therefore Buddhist can eat meat when it is offered or if it is for sale. Many Buddhists prefer to be vegetarians in order to not be associated with the killing of animals (since if no one bought the meat the butchers would stop the killing of animals).

I myself need to eat meat for the protein content. I can not eat large quantities of Soy Beans (which make tofu) that many vegetarians eat for protein because of some side affects (kidney stones).

The above is incorrect. The Buddha told us we can eat anything offered to us, even meat, as long as the meat was not killed by us or killed just for us. Many Buddhists are vegetarians because of thier great compassion for all living things. The reasoning is that if they do not buy or eat pre-killed meats then there will be less of a demand for it and then it might stop.
