Nothing really - traps get negated, including Call of the Haunted. Call of the Haunted special summons a monster, and has a condition to destroy itself or the monster, depending on what happens. However it is not true to say it is 'holding' the monster on the field. Simply negating Call of the Haunted will not destroy the monster. While Call of the Haunted is being negated, if the monster is destroyed, Call of the Haunted will remain on the field, uselessly. If Call itself is destroyed, then the monster is not destroyed.

Yes, that's fine. He activates Monster Reborn, targeting Blue-Eyes. You chain Call of the Haunted, targeting the same one. Just because Monster Reborn targeted it first, does not mean other cards can't target it. The chain resolves in reverse order as normal, so your Call of the Haunted resolves first, summoning the Blue-Eyes, then his Monster Reborn resolves without effect because the target is gone (he cannot select a new target).

You can't interrupt a chain while it is resolving. So Call of the Haunted is chained to Mystical Space Typhoon. Call of the Haunted resolves first, summoning the target. However even if it has a Quick effect, it can't be used here as the chan has not finished resolving. Mystical Space Typhoon will then resolve as normal. However, if the monster has a continuous effect, this will become active after CotH resolves, but before MST can. If it was Jinzo for example, that means he'd survive, if his CotH was MST's target. There aren't many other useful ones that could be applied in this case though.

Another advantage that influenced the banning of Call of the Haunted was its ability to activate even on the opponent's turn. Monster Reborn could not do that. Later, when the new Forbbiden/Limited card list came out, Monster Reborn was switched with Call of the Haunted on the Forbidden section. And the list after that placed Premature Burial right next to Call of the Haunted in the Forbidden list, and Magician of Faith was put there as well to avoid abuse of the newly released Monster Reborn.Premature Burial was deemed even more abused than Call of the Haunted. If A activates call of the haunted and then B chains MST then COTH effect disappears but what happens if MST targets face down COTH and its chained to MST and targeting sangan or Armageddon knight?
If A activates Call of the Haunted and B Chains Mistical Space Typhoon, COTH is destroyed and no monsters are summoned. If COTH is chained to MST, either monster will be summoned, but then MST will destroy COTH, and the monster will also be destroyed. However, either monsters effect will activate as both will be summoned then destroyed.

It's like they don't mind players being able to special summon from the graveyard like that, just as long as there aren't too many effects that can do it easily. When we get Monster Reborn back, we've usually lose Premature Burial or Call of the Haunted at the same time.
