Marine snails evolved in water, and have gills that extract oxygen from the water. Water is pulled in through the siphon, and then pumped back out. In contrast, freshwater snails must travel to the surface to breath, as they actually have lungs, because they evolved from land snail anscestors.

That depends on the species of snail. A terrestrial snail, such as the common garden snail, would likely drown if left too long in water. Purely aquatic snails would die if brought out of the water for any significant period of time.

For instance, if you have an aquarium in which you keep trapdoor snails or nerites or (if it's saltwater) turbo snails, none of those will survive out of the water. That said, there are amphibious snails. A common aquarium pet is the apple snail, or mystery snail. The most common species of this snail is Pomacea diffusa and it has both a gill-like organ and a lung-like organ. In fact, it has a siphon organ that it will sometimes push up out of the water to get some fresh air. They even lay their eggs in a clutch above the water line. This species is the one most often legal, though check your state and local laws.

Most other aquarium species, including common "pest snails", will die if taken out of the water for too long.

Only some kinds can, but not all. So you can't just place a snail from the ground and place it in water and think it is going to live!!!
