The Law of Conservation of Energy says that the total amount of energy in a system has to remain the same - usually expressed as "energy cannot be created or destroyed". In molecules, the bonds between the atoms have a lot of stored energy in them. In order to break a bond, you have to put in a little energy, but then the energy stored in those bonds is released and available to use. When you run a chemical reaction, you have two steps. First, you have to break the original bonds. This process is exothermic - it releases energy. Second, you have to make new bonds. This process is endothermic - it absorbs energy. What determines whether a reaction absorbs or releases energy is the balance between the two. Hydrogen gas and oxygen gas both contain a lot of energy, while water only contains a little bit of energy. Converting from hydrogen and oxygen to water is exothermic, while converting from water to hydrogen and oxygen is endothermic.

In a chemical reaction atoms nuclei are not changed, all bonds that are formed or broken are caused by sharing of electrons among atoms (covalent bonds) by electromagnetic interaction between charged atoms (ion bonds) or by the so called weak forces like hydrogen bonds or van der Waals bonds. If the atoms nuclei are changed the reaction is not a chemical reaction, but a nuclear reaction. For example, the reaction creating salt (NaCl) from HCl and NaOH dissolved in water solution is a chemical reaction. A simple rule drives spontaneous chemical reactions like salt creation: the overall chemical system energy (called G) has to decrease, so that the final state has to be stable at an energy level lower than the initial state. In practice, non spontaneous reactions are also caused by injecting energy into the system and then dividing the components so that the system does not revert to the initial state when the energy feeding ends.
