I would say Skyrim has better replay ability since you can choose many different ways of playing the game. Skyrim also has thousands of mods to install to fundamentally change how the game is played.

Skyrim is the name for a province of Tamriel in the Elder Scrolls games, and the name of the game specifically set there. There are no other Skyrims.
Dawnguard is basically an expansion pack for skyrim. like all expansion packs, it requires the base game to play. So on a PC (and any other gaming device) you need skyrim first and then you can install dawnguard.
installing "skyrim" from the disc is just supposed to make the game run smoother/ faster. personally I don't notice much difference in performance but if you have a lot of free space it could be worth a try.
