Sprites can be seen best by using a holey stone. Look through the hole on the stone and you should see forms flickering before you very quickly. These are sprites (or fairies, or elementals, or whatever happens to cross in front of the portal.)
To stop looking, just pull the stone away and put it away where it is normally kept.
