It depends if your mold is lined or not. Use only lined (usually with nickel) for baking. Some jello molds are not lined. I think they are ok just for molding jello are shaping foods such as rice or mousses. (Some people worry about the copper leaching into the food as copper is toxic, but I don't think the contact is significant in these cases.) Copper also has a protective laquer on it to prevent tarnishing. When you apply heat to it, it will discolor. You should remove it by putting it in a larger pot and boiling it with a little WASHING SODA for about 10 min, then peel off the coating. ** Note** Washing soda is NOT THE SAME as baking soda. Arm & Hammer makes one you can usually find in the laundry aisle of the grocery, possibly the health food store.
