Can you ask for less espresso in a latte or macchiato and does this mean they would give you less in the cup if you asked for half of the espresso so it wouldn't be as strong?

Most coffee places will make anything you want them to. If you describe what you want in your drink, they will almost certainly be able to make it.

Yes, you can always ask for less espresso, they would still fill the cup with steamed milk to the top. My wife usually requests less in hers, I make out on the deal because I tell them to add it to mine.
