Actually, it's not possible to change the mobile OS, since it is preinstalled in the flash memory of the mobile. If you want to change the OS, it is not possible at the consumer level. You need to ask some hacker or the manufacturer themselves as they have the required things to do so.
Although, now-a-days, smart phones (Android, Windows) can be flashed with newer or older or custom versions of their respective OS. Some developers have even tried to port Android system to Windows mobile.
