Minecraft is a good game, and if you are creative then you can play it for hours. However, Fallout 3 is an AMAZING game, and it's re-playability is the longest for any linear game I've ever played. I've sunk over 100 hours in Fallout 3 and still continue playing all the mods and DLC.
I personally recommend Fallout 3 to any other Fallout game. Fallout 3 has a more organized and in my opinion interesting storyline. And you. And you can also keep the game going after you beat the main quest on Fallout 3 if you buy the DLC "Broken Steel."
