just check out the butt of the pineapple. if it's a little yellowish then it's ripe. the discoloring from green to light yellow till light orange tell that the fruit is ready to eat.

If you want a more definitive method, a new tool is on the market, called a ripefruitgauge.com. It indicates the firmness inside a number of fruit without cutting them open.
