It depends on what kind of green lizard you have. Ther are green anoles, day geckos, chameleons, Chinese water dragons... If you are looking for white instead of purple, your best bet is to start a new batch. The purple is definitely safe to eat, because if you continue to grow the purple sprouts, they will blossom into the final stage which is green.
