Yes, you can. Slice off the top of the already washed pepper, uncooked, and remove the seeds. Place in freezer bags and freeze. When you're ready to cut up the pepper, removed from the bag and cut while frozen. You can add them still frozen to the dish you are cooking. If you want to stuff them, allow to thaw, stuff them with your favorite stuffing and bake.

The price for bell peppers is changing. The last time I went shopping (2 Days ago), green bell peppers were 79 cents. Red and yellow were upwards from a dollar. (This was at Smith Grocery). You will find cheaper ones at a market versus a name brand store.

It really depends on how you keep them. If you keep them in the fridge, they'll last for about 3-4 weeks, but they might dry out during that time. There are hardly any calories in a pepper. Hope this helps a bit! ;)
