Minifigure faces are still yellow when they come directly from a Lego created brand. Its when lego has a licensing deal with a popular francise, say STAR WARS, AVENGERS, or THE HOBBIT. In this case, Lego minifigure faces will immitate the characters from these series, leading to a peach color closer to an actual human to better tie-in with the movie. If you look at Lego sets from CITY, CREATOR, and CASTLE, which are a brand created by Lego, those minifigures in the sets still have the classic yellow face.
The first 'figure' was produced in 1975. However, it wasn't till 1978 that we saw the first modern 'minifigure' hit our sets. It was released in Denmark, where Lego was invented.
