The answer to this question is yes. But the problem is when you freeze a banana you damage it too much, the cells will turn black and possibly loose form on melting. Bananas are usually quickly dried, cut in thin plates on warm air with lots of ventilation.
You just peel the banana and then wrap the inside with tin foil. I usually cut them in half and wrap both halves. It's great for throwing in the blender with strawberries and milk or almond milk for a smoothie.
