One way to freeze collard greens is to

  1. Wash the greens thoroughly
  2. Remove and discard stems
  3. Blanch the leaves in boiling water for 3-4 minutes
  4. Use slotted spoon to remove leaves from boiling water and place in bowl filled with ice water. Let it chill for 3-4 minutes.
  5. Remove from ice water and place in colander to drain completely
  6. Pack into freezer containers or freezer bags. If using freezer bags, remove as much air as possible.
  7. Place in freezer. They can keep up to 12 months.

Any time you freeze a vegetable the water in the cells expands and breaks the cell walls. this leads to a mushy consistency and it can affect the taste. I would recommend canning or only half-cooking them before you freeze them.

More information:

Collards, spinach and other greens should be blanched before freezing rather than cooked. To blanch, immerse the greens in boiling water for only a few seconds and remove while still bright green. Plunge immediately in ice water to stop the cooking process, then chop and freeze.

You can freeze uncooked collard greens. It does not harm the leaf to freeze it but it will not last forever this way. Cooking the greens first will help them to last longer in the freezer.
