Olive Oil is not a "high heat" oil so although it is possible to cook french fries in olive oil it is more likely they fries will be more oily.

When you cook anything in oil, the hotter the oil the more quickly it seals the out portion of the food allowing only the heat of the oil to cook the inside. That's what makes them crispy. If you cook anything in oil on a lower heat it will not seal and crisp the food on the outer portion allowing the oil to seep in the inner portion of the foods.

If you heat olive oil at very high temperatures it will burn and hence, burn the food.

So in short, you can cook fries in Olive oil but they won't be as crispy.

You can cook fries this way in olive oil: cut the potatoes into wedges, about 2.5 cm (1 inch) at the thick end, tapering to nothing, and arrange without overlapping in barely 1cm (1/2 inch) olive oil heated to medium-high. Cook until well-colored, and turn; when the other side is golden-brown, put to drain on kitchen paper or a rack. Your fries will be deliciously crisp. You can add garlic, peppercorns, or other aromatics, to the oil as it heats. If you use too much oil, the fries won't be crisp.

You can, but you have to be much more careful with olive oil than many other types of oil when deep-frying, and the type of olive oil also matters.

Extra virgin olive oil, for example, is not generally a good choice for deep-frying because it has a fairly low smoke point (374 F), which means that it will start to smoke and acquire unsavory flavors fairly easily if you don't control the temperature very carefully.

Refined or "extra light" olive oils do have a higher smoke point, but do still have a much stronger flavor than most oils typically used for deep-frying and some of that flavor will inevitably be picked up by the food. For some foods this may be acceptable or even desirable, but for others it may simply make the result taste "strange", so it will depend on exactly what you are cooking whether this is a good thing.

Olive oil is also not typically used much for deep-frying because it is usually much more expensive than other forms of oil (corn or peanut, for example), which also do not have any of the above disadvantages.

Olive oil ordinarily is not used for frying because it has a low smoking point. Typical frying oils such as peanut oil can be heated to much higher temperatures without smoking. There is an exception, in that a method recently published in the NYTimes food section described starting fries in cold oil, then slowly raising the heat and cooking until crisp at an unusually low temperature. This method is perfect for olive oil and produces remarkably good fries. See attached links below.

Not typically, deep frying is usually done at 375F (190C), extra virgin olive oil has a smoke point of between 365F and 420F (185C-204C) depending on it's quality and impurity content (olive flesh, moisture...etc.). Clear or light olive oils have a higher smoke point 410F(200C) and are well suited for deep frying.
