your fridge is designed to constantly re- adjust back to the temperature you have set it at. so for example it is always supposed to be at 5 degrees. when you put things in it, those foods are not at exactly 5 degrees, they may be at less or more, and at that point your fridge has to work a little harder than it would "just sitting there" in order to cool down or heat up those foods and get the whole place back to 5. so if you "over" stock your fridge, it means your fridge doesnt have enough power to temperature regulate THAT much stuff and everything will stay warmer than it should.

Because when the temperature drops everything slows down. Food for example if kept in the fridge keeps bacteria away for some time.
