Mashed Butternut Squash
1 butternut squash, peeled and cubed
butter to taste
salt and pepper
In large saucepan of boiling salted water, cook squash for 20 minutes or until tender. Drain and return to pot. MASH with butter, salt and pepper. Serves 4. Some recommend roasting the squash instead of boiling it. Just slice it in half, scoop out the seeds and "place squash in ungreased baking dish,131/2x9x2 inches. Season cut sides with salt and pepper;dot with butter or margarine. Pour water into dish to 1/4-inch depth; cover with aluminum foil. Bake in 400 degree oven 30 minutes or until tender." From there you can scoop out the now-soft flesh, mash and add butter, salt and pepper.

The very best way to have it is roasted -- either cut in half and seeded, or sliced onto a baking sheet, brush lightly with olive oil, and sprinkle with salt/pepper and any of: curry, paprika, cumin, coriander, garlic, onion powder, etc... and bake at about 350 until it browns. You can also steam or or simmer it, then optionally pure into something like mashed potatoes. Add honey or maple syrup or sauteed onions. Good as baby food. It's a very flexible vegetable - you can even grill chunks of it, adding a drop of BBQ or chili sauce at the end.

In a medium saucepan bring squahand water to a boil; cover and cook rapidly until squash in tender (about 10 minutes).Drain and mash with butter, sugar, salt and pepper. Turn into an 8 pie plate.
