Since the screen room should offer enough ventilation i don't see any problems there and if the ceiling is at least eight feet in height you are good. A good friend of mine has a similar setup. He went to home depot and purchased some decorative ceiling panels located in the kitchen and bath department and attached them right above the grill. I believe the panels are 12"x12" in dimension and are easily cleaned if grease and smoke deposits on them, keeping your ceiling from receiving damage.
