You do need carbs even if you're on a diet! Carbohydrates are an essential nutrient, your brain, for instance, can't function properly if you don't get enough carbs. Try to take the carbs you need from healthy foods, like vegetables, fruits and whole grains (brown rice, whole wheat bread and pasta, oatmeal and whole oats, wild rice, popcorn) My favourite vegetables are potatoes - they are healthy and have more carbs than other vegetables. (Boil or steam them instead of frying them though, if you want to keep them healthy) Bananas are my favourite fruits, and contrary to traditional beliefs, they DO NOT make you gain weight. It's true that they have a bit more calories than other fruits, but they are healthy, and a good source of carbs.
Oddly enough, I know vegetarians who do not eat enough fruits and vegetables! Eating protein and carbs is basic nutrition but for stellar health, eat 5-7 servings a day of fruits and vegetables. Protein can be lacking in many vegetarians so eat plenty of beans, whole grains and/or grain substitutes, and nuts and seeds (also for essential oils).
