Is sour cream bad if it's watery?

If cold sour cream is added to a hot dish too quick, it will curdle. You have to temper the sour cream first by adding some of the hot dish to the sour cream slowly stirring, then add the mixture to the hot dish

How do you make cream sour?

Through a fermentation process. A good example would be to find a recipe using sour cream; it will probably explain how to make the cream sour. If a recipe calls for sour cream (or sour milk) add a few drops of lemon juice or vinegar and leave until it sours. You can also buy sour cream at the supermarket.

Is it safe to eat unopened sour cream that was left out overnight?

No it is not. I mean, you can eat it. But it will not taste right. And it might give you some tummy troubles. That is only partly true. Sour cream and yogurt are made the exact same way... by adding live cultures to milk(for yogurt) or cream(for sour cream), and then leaving them at room temp for up to several days. As with anything, eventually it will "go bad", but if it tastes good, then it is good. Cottage cheese can be homemade by adding some vinegar to a gallon of milk and leaving it on the counter for a day. Then, rinse the vinegar and refrigerate. As a side note for healthy living, I always use plain yogurt instead of sour cream. It has all the taste without the fat, and none of the added chemicals and fake sweeteners that Fat Free Sour Cream has. Try it.

Can whipping cream left too long in the fridge be used as sour cream?

Whipped cream is heavy cream from cows milk (typically with sugar added) sour cream is the same cream that has slightly fermented - it is sour (like its name) the two are not used together in any recipes for western dishes - but experiment, you might come up with something delicious.More:Sour cream is unlikely to whip up as you would like for the many whipped cream uses that are for adding air to make the dish fluffier along with the sweet cream flavor and creamy texture. However, it can make a great topping just the same.If you sweeten the sour cream with a little sugar or Splenda, it makes a great topping or dip for fruit (grapes are especially good with this with fresh grated nutmeg added). You can alter with other flavors added, like cinnamon, a dab of lime or lemon zest or juice, cardamom, nutmeg, fresh or ground ginger, etc. This topping is also very good on jello, pumpkin pie, etc. As mentioned in the suggestion above, experimenting can turn out some great new flavors. Some creamed soups and sauces may suggest adding a little sweet cream (not sweetened) at the end for smooth texture and for flavor. In that use, sour cream works just as well and sometimes better. It will be better if you temper it with a small amount of the soup or sauce before adding it all at once to the dish (to avoid separation/curdling).
