That is only partly true. Sour cream and yogurt are made the exact same way... by adding live cultures to milk(for yogurt) or cream(for sour cream), and then leaving them at room temp for up to several days. As with anything, eventually it will "go bad", but if it tastes good, then it is good. Cottage cheese can be homemade by adding some vinegar to a gallon of milk and leaving it on the counter for a day. Then, rinse the vinegar and refrigerate.
